The shōchū distilled from moromi (fermentation mash) which has been prepared with only rice as a raw material, and using the underground water that is an abundant part of nature in Hitoyoshi Kuma, is called “Kuma Shochu.” This name, “Kuma Shochu,” is an international top brand recognized by the World Trade Organization (WTO) as having geographical indication of the place of origin, just like such brands as Scotch whisky, Cognac brandy, and Bordeaux wine.
